Blueberry Cobbler

 Blueberry Cobbler

Ingredients:

For the blueberry filling:

- 4 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest

For the cobbler topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/4 cup milk
- 1 large egg, lightly beaten

Optional serving suggestions:
- Vanilla ice cream or whipped cream

Instructions:

1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and lemon zest. Gently toss until the blueberries are evenly coated with the sugar and cornstarch. Set aside to allow the berries to release their juices.
3. In a separate bowl, prepare the cobbler topping. Mix the flour, granulated sugar, baking powder, and salt together. Add the cold butter cubes to the mixture. Using your fingertips or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
4. In a small bowl, whisk together the milk and lightly beaten egg. Pour this mixture into the dry ingredients for the cobbler topping. Stir until just combined, being careful not to overmix.
5. Transfer the blueberry filling into a 9x13-inch baking dish or a similar-sized ovenproof dish. Spread the blueberries out evenly.
6. Drop spoonfuls of the cobbler topping mixture over the blueberry filling. The topping doesn't have to be perfectly spread out; it will expand as it bakes.
7. Place the baking dish in the preheated oven and bake for about 35-40 minutes or until the cobbler topping is golden brown, and the blueberry filling is bubbling around the edges.
8. Remove the blueberry cobbler from the oven and let it cool slightly before serving.
9. Serve the warm blueberry cobbler on its own or with a scoop of vanilla ice cream or a dollop of whipped cream for an extra delicious treat!
