Ingredients:
- 8 small flour or corn tortillas
- 6 large eggs
- 1 tablespoon butter or oil
- 1 cup cooked and seasoned breakfast sausage or bacon (crumbled)
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- Salt and pepper, to taste
- Optional toppings: salsa, sour cream, avocado slices, hot sauce, cilantro, etc.

Instructions:

1. Warm the tortillas: Heat a large non-stick skillet over medium heat and warm the tortillas on both sides until they are soft and pliable. Keep them warm by wrapping them in a clean kitchen towel or aluminum foil.
2. Cook the eggs: In a mixing bowl, crack the eggs and whisk them until well combined. Season with a pinch of salt and pepper. In the same skillet used for the tortillas, melt the butter or heat the oil over medium-low heat. Pour in the beaten eggs and cook, stirring gently, until they are just set but still slightly creamy. Be careful not to overcook them.
3. Assemble the tacos: Lay out the warmed tortillas and divide the scrambled eggs evenly among them, placing the eggs in the center of each tortilla. Add a portion of cooked breakfast sausage or bacon on top of the eggs.
