Lime Chicken Tacos

Ingredients:

For the chicken:
- 1 pound boneless, skinless chicken breasts, thinly sliced or diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust according to your spice preference)
- Zest and juice of 1 lime
- Salt and pepper to taste

For the taco toppings:
- 8 small soft corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup crumbled queso fresco (or shredded cheddar cheese)
- Lime wedges for serving

Optional toppings:
- Sliced avocado or guacamole
- Sour cream or Mexican crema
- Hot sauce or salsa

Instructions:

1. In a mixing bowl, combine olive oil, minced garlic, chili powder, ground cumin, paprika, cayenne pepper, lime zest, lime juice, salt, and pepper. Stir well to make the marinade.
2. Add the thinly sliced or diced chicken to the marinade, ensuring the chicken is well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (for better flavor, marinate for 2 to 4 hours).
3. While the chicken is marinating, prepare the taco toppings: shred the lettuce, dice the tomatoes, chop the cilantro, and crumble the queso fresco. Set them aside in separate bowls.
4. Heat a large skillet over medium-high heat. Once the skillet is hot, add the marinated chicken, along with the marinade. Cook the chicken for about 6-8 minutes or until it's cooked through and slightly charred. Stir occasionally to ensure even cooking.
5. Warm the corn tortillas: You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in a damp paper towel and microwave for about 1 minute until soft and pliable.
6. Assemble the tacos: Take a warm tortilla and add a spoonful of the cooked chicken. Top with shredded lettuce, diced tomatoes, red onions, cilantro, and crumbled queso fresco. You can also add any optional toppings you desire.
7. Serve the tacos with lime wedges on the side. Squeeze fresh lime juice over the tacos before eating for an extra burst of flavor.
