Vegan Sushi Roll
Ingredients:
- 2 cups sushi rice
- 3 1/2 cups water
- 1/3 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- Nori sheets (seaweed sheets)
- 2 ripe avocados, sliced into thin strips
- Bamboo sushi rolling mat
- Soy sauce, for dipping (make sure it's vegan)
- Pickled ginger, for serving
- Wasabi, for serving
Instructions:
1. Rinse the sushi rice in cold water until the water becomes clear. Drain the rice thoroughly.
2. In a medium-sized saucepan, combine the rinsed rice and water. Let it soak for about 30 minutes. Then, bring the rice to a boil over medium heat. Reduce the heat to low, cover with a lid, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
3. While the rice is cooking, prepare the sushi vinegar. In a small bowl, mix the rice vinegar, sugar, and salt until the sugar and salt dissolve.
4. Once the rice is cooked, transfer it to a large mixing bowl. Gradually pour the sushi vinegar mixture over the rice while gently mixing it with a spatula. Be careful not to smash the rice grains. Let the rice cool down to room temperature.
5. Lay a bamboo sushi rolling mat on a clean surface. Place a nori sheet, shiny side down, on the mat.
6. Wet your fingers to prevent sticking, and take a handful of sushi rice. Spread it evenly over the nori sheet, leaving about 1 inch of nori at the top edge. Press the rice down gently to ensure it sticks.
7. Place avocado strips horizontally on the center of the rice bed.
8. Begin rolling the sushi. Lift the edge of the bamboo mat and fold it over the filling, making sure the nori meets the opposite edge of rice. Apply gentle pressure while rolling to create a firm and even roll.
9. When you reach the uncovered edge of the nori, wet it with a bit of water to seal the roll.
10. Repeat steps 5 to 9 to make more rolls with the remaining ingredients.
11. Once all the rolls are made, use a sharp knife to cut each roll into bite-sized pieces.
12. Arrange the vegan avocado sushi rolls on a serving plate. Serve with soy sauce, pickled ginger, and wasabi on the side.
