 Veggie Burgers

Ingredients:

For the veggie burger patties:
- 1 cup rolled oats
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa or brown rice
- 1/2 cup grated carrots
- 1/2 cup finely chopped bell peppers (any color you prefer)
- 1/2 cup finely chopped onions
- 2 garlic cloves, minced
- 2 tablespoons ground flaxseed mixed with 5 tablespoons water (flax egg)
- 2 tablespoons soy sauce or tamari (for a gluten-free option)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder (adjust to your spice preference)
- Salt and pepper to taste

For assembly:
- Burger buns of your choice
- Lettuce leaves
- Sliced tomatoes
- Sliced avocado
- Onion rings (optional)
- Your favorite burger condiments (e.g., ketchup, mustard, vegan mayo)

Instructions:

1. In a small bowl, prepare the flax egg by mixing the ground flaxseed with water. Let it sit for about 5 minutes until it becomes thick and gelatinous.
2. In a food processor, add the drained black beans and pulse until they are coarsely mashed but not completely smooth.
3. In a large mixing bowl, combine the pulsed black beans, cooked quinoa or brown rice, grated carrots, chopped bell peppers, onions, minced garlic, rolled oats, flax egg, soy sauce (or tamari), olive oil, ground cumin, paprika, chili powder, salt, and pepper. Mix everything thoroughly until well combined.
4. Cover the mixture and refrigerate for at least 30 minutes to help it firm up and make it easier to shape the patties.
5. Preheat your grill or stovetop griddle over medium heat. Alternatively, you can bake the patties in the oven at 375°F (190°C) for about 20-25 minutes, flipping halfway through.
6. Divide the mixture into equal portions and shape them into burger patties. The size can be adjusted according to your preference.
7. Place the patties on the grill or griddle and cook for about 4-5 minutes on each side or until they develop a golden-brown crust.
8. Once the patties are fully cooked, assemble your veggie burgers by placing each patty on a burger bun. Add lettuce leaves, sliced tomatoes, sliced avocado, onion rings (if using), and your favorite condiments.
9. Serve your delicious veggie burgers with a side of salad or some sweet potato fries for a complete and satisfying meal.
