Chicken Roll Ups

 


Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup spinach leaves
- 1 cup shredded mozzarella cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil

Instructions:
1. Preheat the oven to 375°F (190°C). 
2. Butterfly each chicken breast by slicing horizontally through the center, but not completely through, so it opens up like a book.
3. Lay the butterflied chicken breasts flat on a cutting board and season both sides with garlic powder, dried oregano, salt, and black pepper.
4. Layer each chicken breast with spinach leaves, shredded mozzarella cheese, and chopped sun-dried tomatoes.
5. Carefully roll up each chicken breast tightly, securing it with toothpicks if needed.
6. Heat olive oil in a large oven-safe skillet over medium-high heat. Place the chicken roll ups seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown.
7. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
8. Remove the toothpicks before serving. Cut the chicken roll ups into slices and serve hot as a delicious lunch or dinner option.
