Frozen Breakfast Burritos

 


Ingredients:
- 6 large flour tortillas
- 1 cup cooked rice
- 1 cup cooked black beans
- 1 cup cooked and seasoned ground beef or shredded chicken
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped onions
- 1/4 cup chopped fresh cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste

Instructions:
1. In a mixing bowl, combine the cooked rice, black beans, ground beef or shredded chicken, diced tomatoes, onions, cilantro, chili powder, cumin, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

2. Place a flour tortilla on a flat surface. Spoon about 1/2 to 3/4 cup of the filling mixture onto the center of the tortilla. Sprinkle some shredded cheddar cheese on top of the filling.

3. Fold in the sides of the tortilla and then roll it tightly from bottom to top, ensuring that the filling is well enclosed. Repeat this process for the remaining tortillas and filling.

4. Once you have assembled all the burritos, wrap each one individually in aluminum foil, making sure they are tightly sealed. This will help preserve the freshness and prevent freezer burn.

5. Place the wrapped burritos in the freezer and let them freeze for at least 2 hours or until solid.

6. When you're ready to enjoy the frozen burritos, preheat your oven to 375°F (190°C). Unwrap the burritos from the aluminum foil and place them on a baking sheet.

7. Bake the frozen burritos for about 20-25 minutes, or until they are heated through and the cheese is melted and bubbly.

8. Remove the burritos from the oven and let them cool slightly before serving. You can serve them with your favorite toppings such as salsa, guacamole, or sour cream.
